This New Ann Arbor restaurant offers pizza, pastries, and fine dining under one roof

Ann Arbor – If you are from the Ann Arbor area, you might remember Lord Fox or Roger Monk’s restaurants. Well, a new restaurant is opening in this historic location: the Dixboro Project.

It got its name shortly after the purchase and owner Sava Farah decided what to do with the large property. She and her husband visited the old bar that used to be there and dreamed of what they could make of it. When Roger Monk’s finally closed in 2016, the Farah restaurant owner couldn’t turn the historic building into an office building, so she bought it and made it her project.

The property is large, about 7 acres, with a late 19th century barn that has served as a restaurant for 100 years. After thinking about it, Farah, the owner of Sava and Aventura restaurants in Ann Arbor, decided on a three-in-one concept. The Dixboro project has everything from pastries to pizza to fine dining.

The old barn is called The Boro and has been renovated and turned into a casual restaurant specializing in Neopolitan style pizzas. They added a second barn to the building with a full wall of glass so you can look out into the surrounding forest. This room will function as the Dixboro House, your upscale dining component. Given the huge property and plans to develop it into a park with a play area for children, Farah wanted to create a take-away space in the restaurant as well. The carryout section is dedicated to just that and also offers coffee and pastries from the in-house pastry chef.

Only the carry-out portion is currently open, but The Boro plans to open this spring and Dixboro House is slated to open sometime this summer.

This was also a major undertaking from a food standpoint, as the dishes for all three concepts will come from the same kitchen under the direction of Michelin-starred chef Louis Maldonado. Chef Maldonado says it’s like Disney World to him and his staff in that they can work on so many different types of food. To keep everything together, all dishes, whether pizza or filet mignon, are prepared with the same care, attention to detail and the same techniques.
