Michigan’s Best Local Meals: Beet burgers and Indian-inspired grain bowls help you eat well at Hutkay Fusion

ANN ARBOR, MI – For Swaroop Bhojani, Hutkay Fusion is part good food, part educational opportunity.

Ann Arbor Restaurant serves Indian-inspired cuisine with an emphasis on health and wellness.

The menu is 90 percent vegan, Bhojani said, and features a variety of heirloom vegetables and sprouted grains. The 11 types of sauces from Hutkay are also free from added sugar, preservatives, colorings or creams.

One of Hutkay’s most popular dishes is the beetroot burger with beet and coconut patty, which Bhojani said was “something to die for”.

Other popular dishes are the Shanu Bowl with sprouted chickpeas, roasted plantain chips and colechasia rolls, and the Samosa Bowl with sprouted chickpeas, vegetables, microgreens and a tamarind, date and mint sauce. Hutkay Fusion also serves bowls of grain, wraps, soups, and salads.

Bhojani has a principle in his dishes: “Food is medicine”.

In addition to pea vegetables, various sprouted grains are also served in the dishes, including wraps made from organic seedlings.

“(It is) more digestible because it comes from a living grain,” he said.

Bhojani, who previously worked in radiation oncology at the University of Michigan, has also hosted courses that taught cancer patients how to eat to fight cancer.

Hutkay Fusion is more than a restaurant, said Bhojani.

“A lot of customers come every day,” he says. “It’s like a community here.”
