Michigan’s Best Local Meals: Dried brine made to order is the secret to the success of fried chicken at Ma Lou’s
YPSILANTI, MI – For KC Knipple, the owner of Ma Lou’s in Ypsilanti, the key to fried chicken is fresh meat and a dry brine.
Ma Lou’s is known for serving southern-style fried chicken, smashed-style chicken burgers, and a variety of wings.
The restaurant buys raw chicken, uses a dry brine, and deep-fried it to order.
“That is honestly the secret,” said Knipple. “I think the dry brine keeps it more humid. It gives you a greater margin of error (in frying). “
Ma Lou’s is best known for The OG Sandwich, which features fried chicken on an onion roll with cheddar cheese, smoked Gouda cheese, pickles, and coleslaw. It also serves Nashville hot chicken and buffalo sauce-style sandwiches, as well as banh mi and catfish po ‘boy sandwiches.
“The idea is to take flavors and aspects of the entire kitchen and turn them into Ma Lou’s,” Knipple said. “Chicken is a very versatile protein.”
The restaurant also offers a chicken and waffle platter. The waffles are unusually dark due to the high amounts of vanilla and cinnamon in the batter, Knipple said. They are fried too.
“So it comes out more like a funnel cake,” he said.
Ma Lou’s also serves buffalo, chilli barbecue, lemon pepper, garlic, parmesan, and sriracha wings.
“Anything goes with fried chicken,” said Knipple.
