New bagel, waffle shop opens in Grand Rapids

GRAND RAPIDS, MI — A new business specializing in bagels and waffles has opened at the Downtown Market.

Rad Bagels, created by by Shelby and Julie Kibler, the owners of Field and Fire bakery, offers bagels and bagel sandwiches in “rad” flavors created with Field and Fire’s sourdough and yeast dough.

Examples include a wasabi ginger sesame bagel, gochujang scallion bagel, and the Morning Flame! bagel sandwich, which is made with eggs, cheddar cheese, harissa mayo, cream cheese and a choice of bacon or tempe.

“We’ve been looking for a way to produce something new and exciting and grow as a company,” Shelby Kibler said. “This new venture will allow us to expand how we serve this community while taking bagels and bagel sandwiches to the next level.”

The bagels are sold sliced ​​and toasted with a choice of spreads or as a sandwich during breakfast, lunch and dinner.

Rad Bagels is located on the east side of the Market along Ionia Street. It has its own exterior entrance, meaning it can open earlier than the rest of the Downtown Market. 435 Ionia Ave. SW

The shop’s hours are 8 am to 7 pm Monday through Thursday, 8 am to 8 pm Friday through Saturday, and 9 am to 7 pm on Sunday. See the full menu on the website here.

In addition to bagels, the shop also serves “handheld waffles with mix-ins to eat on the go,” according to a news release. Instead of toppings, extra ingredients such as fruit are mixed into the batter and cooked with the waffle. The shop is also expected to offer waffle sandwiches in sweet and savory flavors.
