GTPulse: Conifer’s Summer Pop Up Series Begins Next Month
Conifer was one of the many topics put on hold due to the pandemic. I had reached out to brothers Patrick and Michael Evans last March to write about an upcoming kitchen takeover they were preparing for at The Little Fleet. Covid mayhem broke out, the event was canceled, and the world missed a night of the duo’s meticulously put together kitchen (let’s say five quick times). Do not worry. You’re back at WaterFire Vineyards this year with a pop-up series starting next month.
These two young chefs from Traverse City have years of culinary experience. Much of this dates back to the time they spent at various fine dining restaurants across San Francisco.
“We were there for a long time again and again. Mike retired four years ago, and I’ve been here three years at this point, ”said Patrick.
The two grew up in Traverse City. Although they both worked in San Francisco, they didn’t spend much time together. Conifer is their pop-up restaurant that changed all of that. They have held various dinners in different restaurants and vineyards in the area. They are known for selling out fast and showcasing locally made ingredients in their kitchen.
“We are really focused on ingredients. When we first started cooking in Northern Michigan, this was a great introduction to farm food and cooking. But we do have chops in California, so it’s steeped in some of that Northern California ingredient-driven cuisine. But we have influences everywhere. Is it New American? Is it regional? I’m not sure, but it’s northern Michigan, always with simplicity in mind. “
The Summer Wine Dinner Series takes place every last Sunday of the month from 6 p.m. to 9 p.m. The five-course tasting menu is paired with a selection of sustainably grown WaterFire Vineyards wines. Tickets are sold through MyNorthTickets and are no doubt sold out for any event. The menus change when the high season for local ingredients changes.
“People will be buying tickets and once we have a full list of the guests coming for this dinner we’ll email them with food allergies and dislikes. We’re taking that and will be writing a menu closer to the actual date to see what’s available seasonally. So it will change completely every month. “
